Behind the Burner: Duck and Scallop Rumaki by D'Artagnan

Makes 8 servings

INGREDIENTS:

2 dozen sea scallops
1 package duck bacon
1/4 cup soy sauce
brown sugar

PREPARATION:

1. Preheat oven to 450 F.

2. Pat the scallops dry and wrap each one in a single slice of the duck bacon -- secure with a toothpick.

3. Place the scallops in a shallow baking dish large enough to hold them in one layer. Pour in the soy sauce and evenly sprinkle a light layer of the brown sugar over the top.

4. Place in the oven and cook for 5 minutes. Remove from the oven and turn each rumaki over and return to the oven for an additional 3 minutes. Remove from the oven, place on a plate and serve.
