Dominick's Tomato Sauce
Makes Approximately 20 cups serving
INGREDIENTS:
6 28 0z. cans tomatoes, passed through food mill
4 cups soffrito (3 ribs of celery, 1 large yellow onion, 3 cloves garlic , 1/4 bunch parsley), chopped
1 bunch each basil & oregano, wrapped in cheese cloth
1 Teaspoon sugar -
3 tablespoons tomato paste
3 teaspoons salt
1 teaspoon red pepper
1/4 cup olive oil
**Note: For smaller amount, divide proportions by half.
PREPARATION:
1. Add olive oil to a heated pot.
2. Add soffrito ingredients and sauté for 3 minutes.
3. Add salt, sugar, pepper and tomato paste, sauté 2 minutes.
4. Add tomatoes simmer 3 hours.
5. Lastly toss in basil and oregano, leave in sauce until completely cooled.
