Behind the Burner: Crispy Fried Green Olives by Divya Gugnani

Makes 6 servings

INGREDIENTS:

Ingredients
1 (4 oz.) package light cream cheese, softened
1 Cup shredded Colby-Jack cheese
1 tsp. hot sauce
1 (21 oz.) jar large, pitted green olives, drained
2 eggs
1 tbsp. water
2 cups dry bread crumbs
2 tbsp. all-purpose flour
1 tsp. ground black pepper
4 Cups vegetable oil


PREPARATION:

1. Mix together the cream cheese, pepperjack cheese, and hot sauce until blended. Place into a piping bag, and fill each olive with the cheese mixture. Place the olives onto a baking sheet, and freeze for 30 minutes.

2. Beat the eggs with the water in a small bowl; set aside. Combine the breadcrumbs, flour, and black pepper in a medium mixing bowl. Dip olives into the egg mixture, then roll in the breadcrumbs. Replace the breaded olives onto the baking sheet, and freeze 30 minutes more.

3. Heat oil in a large saucepan to 350 degrees F (175 degrees C). Dip the olives into the remaining egg mixture to bread a second time, then roll in the bread crumbs.

4. Fry the olives in the preheated oil until golden on the outside and hot on the inside, 3-4 minutes.
