Behind the Burner: Creamy Chicken Salad Wraps by Divya Gugnani

Makes 4 servings

INGREDIENTS:

2 cups deli creamy chicken salad
1 tsp. chopped jalapeno pepper
4 (10 inch) whole grain wraps
1/2 cup homemade guacamole
8 slices Pepper Jack cheese
1 handful of baby spinach lettuce leaves
1 chopped, seeded tomato
1 avocado, peeled and chopped
1 cup mild salsa

PREPARATION:

1. Combine together chicken salad and jalapeno pepper in small bowl. For each wrap, spread 2 tbsp. guacamole over each wide center of the tortilla. Place two slices of cheese in the middle of each tortilla, then place lettuce on top.

2. Spoon about 1/2 cup chicken salad mixture over lettuce and sprinkle with chopped tomato and avocado. Roll up tightly and secure with toothpick. Serve with salsa on the side.
