Behind the Burner: Classic Limoncello by Divya Gugnani

Makes 10-12 servings

INGREDIENTS:

15 medium lemons
2 (750 ml) bottles of unflavored vodka
5 cups filtered water
3 cups sugar

PREPARATION:

1. Clean the lemons and remove the ends. Remove the zest from the lemons using a vegetable peeler, being careful to avoid the pith (which tastes bitter).

2. Place the zest in a sterilized glass bottle or large jar and add the vodka. Seal tightly and store in a cool, dark place for about 2 weeks, or until the zest loses its color.

3. Make a simple syrup by combining 3 cups of water and 3 cups of sugar in a saucepan over low heat. Stir until the sugar is completely dissolved.

4. Once the simple syrup has cooled, add it to the vodka, seal again and allow it to sit for another 2 weeks.

5. Strain the mixture through a coffee filter to remove all lemon zest. Distribute the mixture into sterilized glass bottles, seal tightly and store until ready to drink.
