Chorizo-Style Meatballs with Tomatilla-Avocado Salsa by Chef Marcus Samuelsson
Makes 12 servings
INGREDIENTS:
1/2 lb. ground lamb
1/2 lb. ground pork
2 garlic cloves, minced
1 tsp. mild chili powder
1 tsp. salt
1/2 tsp. cumin
Freshly ground pepper
1 tsp. dried oregano
1 tsp. smoked paprika
2 tbsp. olive oil
PREPARATION:
1. In a large bowl mix the lamb, pork, garlic, chili powder, salt, cumin, pepper, oregano and paprika in a bowl. With wet hands to prevent sticking, form the mixture into 2-inch balls.
2. Heat the oil in a large sauté pan over medium-high heat. Working in batches, add the meatballs and sauté until cooked through, about 4 minutes on each side. Drain on paper towels.
Serve with Tomatilla-Avocado Salsa.
