Behind the Burner: Chopped Vegetable Salad with Lemon Vinaigrette by Katie Nuanes, Jodi Greebel and Melissa Gibson

INGREDIENTS:

Salad:
1/4 small English cucumber, cut into 1/4" rounds
1/2 small tomato, cut into wedges
1/2 small yellow bell pepper, cut into 1/2"-wide strips
1 tbsp red onion, roughly chopped
1 handful kalamata olives, pitted
1 tbsp. crumbled feta cheese
2 tsp. oregano, chopped

Vinaigrette:
2 tsp. fresh lemon juice
2 tsp. extra-virgin olive oil
Salt and pepper to taste

PREPARATION:

In a large bowl combine all ingredients and toss with the vinaigrette
