Behind the Burner: Chinese Ginger Chicken Salad by Divya Gugnani

INGREDIENTS:

2 boneless chicken breasts, cooked and diced
1/4 c. almonds
2 green onions, chopped
1 tbsp. vegan raw sugar
2 tablespoons sesame seeds
1 package ramen noodles, crushed
2 cans mandarin oranges
1/4 cup vegetable oil
1/2 tsp ground ginger
salt and pepper to taste
2 tbsp. distilled white vinegar

PREPARATION:

1. Combine chicken, nuts, onion, sugar, sesame seeds, noodles and cabbage in large bowl.

2. In small bowl combine oil, salt, pepper, ginger and vinegar. Pour oil mixture over noodle mixture. Let stand overnight in refrigerator and serve.
