Chicken Satay by Chef Philippe Chow

Makes 3-4 servings
INGREDIENTS:
1/2 pound chicken breasts sliced into thin strips
1/4 cup flour
1/4 cup corn starch
3 eggs
2 tbsp. canola oil
1/4 cup carrot juice
8" bamboo skewers
another 2 tbsp. canola oil for frying
PREPARATION:
1. Mix all ingredients except chicken in a large mixing bowl. Add the chicken and mix gently making sure the chicken does not separate.
2. Let sit in fridge for at least an hour. Then take each strip of chicken and thread through the skewer. Set aside.
3. Put a large pan on med high heat with 2 tablespoons canola oil. Place skewers on one side for about 2 minutes and then flip and fry for another 2 minutes.
4. Get your favorite store bought peanut satay sauce in the Asian isle of the supermarket and enjoy. You can also use your favorite homemade flavored mayonnaise/anything you like that would go great with chicken.

He says the sauce takes 8 hours so obviously he doesn't use store bought. It would be great to get the recipe.











Would have thought the satay sauce would be part of the recipe from Chef Chow and not store bought.
