Cheesy Bruschetta

Behind the Burner: Cheesy Bruschetta

Makes 6-8 servings

INGREDIENTS:

8 plum tomatoes, chopped
1/2 cup sun-dried tomatoes
1/2 cup olive oil
3 cloves minced garlic
1/4 cup olive oil
2 tbs. balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 tsp. salt
1/4 tsp. ground black pepper
1 loaf of Italian bread
2 cups shredded mozzarella cheese
1 cup Parmesan cheese

PREPARATION:

1. Preheat the oven on broiler setting.

2. In a large bowl, combine the plum tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.

3. Cut the Italian bread into 3/4-inch slices.

4. On a baking sheet, arrange the slices in a single layer.

5. Spread with a tsp. oilive oil evenly on each slice.

6. Top with garlic cloves and Parmesan cheese (like garlic bread).

7. Broil for 1 to 2 minutes, until slightly brown and cheese melts.

8. Divide the tomato mixture evenly over the bread slices. Top the slices with mozzarella cheese.

9. Broil for 5 minutes, or until the cheese is melted.
