Behind the Burner: Catfish in Red Wine Sauce by Divya Gugnani

Makes 2 servings

INGREDIENTS:

2 6 oz. catfish fillets
1 sharon fruit
1/2 red onion
1 plum tomato
2 1/2 cloves garlic
1/2 teaspoon dried basil
1/2 cup red wine (Barbera)
1 teaspoon chopped cliantro leaves for garnish
salt and pepper

PREPARATION:

1. Divide the fish into 4, 3 oz. pieces.

2. Salt and pepper catfish.

3. Sauté catfish in olive oil for about 2 minutes on each side.

4. Remove catfish from pan and set aside.

5. Add diced plum tomato and sharon fruit, along with dried basil.

6. Add red wine and reduce until wine is half the amount of the original liquid.

7. Return fillets to pan, placing them on top of the mixture and simmer until catfish is cooked through.

8. Salt and pepper to taste, then add garnish.
