Carribean Panna Cotta by Divya Gugnani

Makes 4-6 servings

INGREDIENTS:


4 cups coconut milk
4 1/2 cups heavy whipping cream
3 packets gelatine
1 1/2 cups granulated sugar
2 tablespoons vanilla extract
Sliced pineapple for garnish
Fresh mint leaves

PREPARATION:

1. Dissolve gelatin in 1/2 cup of cream, allow to soften. Whisk well.

2. Heat milk till warm, cream sugar & vanilla until dissolved. Beat well.

3. Add gelatin slowly. Whisk well. Strain & pour into cocktail glasses.

4. Allow to set in the refrigerator for 3 hours. Garnish with mint.

Optional for party animals- Drizzle Dark Rum on top.....
