Caprese Pasta by Divya Gugnani
Makes 4 servings
INGREDIENTS:
1/2 lb. fusilli pasta, cooked
1/2 lb. fresh mozzarella
2 medium tomatoes, chopped
2 Tablespoons fresh basil, chopped
2 Tablespoons toasted pine nuts
1 teaspoon garlic, minced
salt and pepper to taste
PREPARATION:
1. Cook pasta until done, drain and let cool, reserve 1/4 cup of pasta water.
2. Once pasta has cooled, if pasta is sticky incorporate the cooking water.
3. Mix pasta, tomatoes, basil, mozzarella and garlic and toss with olive oil and salt and pepper to taste.
Garnish with toasted pine nuts and enjoy.
