Candied Kumquat Tart by Divya Gugnani

Makes 6-8 servings
INGREDIENTS:
4 cups fresh kumquats
1 cup water
2 cups plus 3 tbsp. granulated sugar
2/3 cup low-fat cream cheese
1/3 cup sour cream
1 store bought or homemade tart shell, baked
PREPARATION:
1. Using a sharp knife, slice the kumquats crosswise into thin pieces.
2. In a medium saucepan, combine the water and 2 cups of sugar and bring to a boil. Stir until the sugar is dissolved and then reduce heat to a simmer.
3. Add the kumquat slices and stir until all slices are coated. Simmer for 5 more minutes.
4. Drain the kumquats over a bowl to reserve the sugar syrup. Return syrup to the pan and boil until reduced by half.
5. In a bowl, combine the cream cheese, sour cream and 2 remaining tbsp. sugar. Stir together until smooth.
6. Spread the mixture evenly on the bottom of the tart shell. Place the candied kumquats on top in a decorative fashion. Brush the tops of the kumquats with the reserved syrup.
7. Slice and serve.
