Behind the Burner: Cake with a Secret Kick by Divya Gugnani

INGREDIENTS:

2 cups brown sugar
2 cups all-purpose flour
1/2 tsp. salt
1 cup butter (2 sticks)
1 cup water
3 tbsp. unsweetened cocoa powder
1/2 cup sour cream
2 eggs
1 tsp. baking soda
1/2 tsp. red chili pepper
1/4 cup butter, melted
1/3 cup sweetened cocoa powder
1 1/2 cups powdered sugar
1/4 cup milk
1 tbsp. vanilla extract

PREPARATION:

1. Preheat oven to 350 degrees. Grease and flour a medium sized baking pan.

2. In a large bowl, mix sugar, flour and salt. Set aside.

3. In a small saucepan, boil 1 cup butter, water and 3 tablespoons of unsweetened cocoa. Remove from the heat.

4. Add to flour mixture and beat until smooth.

5. In a separate bowl, combine sour cream, eggs, baking soda and chili pepper. Add to the cake batter. Blend well. Pour batter into baking pan.

6. Bake at 350 degrees for 20 to 30 minutes, or until a toothpick stuck into the center comes out clean.

7. For the Frosting: Melt 1/4 cup butter, add 1/3 cup sweetened cocoa. Add powdered sugar, milk and vanilla. Mix until smooth and free of lumps.

8. Spread frosting on the cooled cake. Cut into squares and serve.
