Behind the Burner: Buffaloaf by D'Artagnan

Makes 6 servings

INGREDIENTS:

2 lbs. ground buffalo
2 teaspoons salt
1/4 teaspoon ground black pepper
2 eggs, lightly beaten
1/2 cup soft bread crumbs
1/2 cup milk
1 teaspoon worcestershire sauce
1/4 cup finely chopped onion
1/4 teaspoon dried thyme, crumbled
1/4 teaspoon chopped, fresh rosemary
one 8 oz. can of tomato sauce
5 dashes Tabasco sauce

PREPARATION:

1. Preheat the oven to 350° F.

2. Mix together all of the ingredients except the tomato sauce and Tabasco sauce.

3. Pack the mixture into a lightly greased loaf pan. Mix the tomato sauce with the Tabasco sauce and spread over the top of the loaf.

4. Bake uncovered for 1 hour. Remove the loaf from the oven and let rest for 5 minutes. Drain the grease, if any.

Plating: Slice, serve, and enjoy.
