Bubble and Squeak by Chef Todd English
INGREDIENTS:
4 oz. ground English style sausage
1/2 cup mashed potatoes
1 each whole egg
2 oz. Napa cabbage, sliced and blanched
2 tsp. butter
salt and pepper to taste
2 oz. canola oil
1/2 oz. sliced scallion
PREPARATION:
1. In a cast iron skillet, brown the sausage with the canola oil. When brown add the cabbage and cook until cabbage has some color.
2. Add half the mashed potatoes and the half the butter, mix together until everything is brown and crispy.
3. Place the other half of the mashed potatoes in a separate small cast iron or baking dish, and toast under the broiler.
4. Simultaneously, put the egg into a nonstick pan with the rest of the butter and cook it sunny side.
5. Once potatoes are browned, add the sausage-cabbage mixture. Place the egg on top and garnish with scallion.
