Brown Sugar Bananas by Divya Gugnani
Makes 2 servings
INGREDIENTS:
2 tbsp. dark brown sugar
1 tsp. butter
1/2 tsp. vegetable oil
2 tbsp. dark rum
1 tsp. limejuice
1/8 tsp. ground cinnamon
1/8 tsp. nutmeg
2 small bananas, sliced
1/4 cup vanilla yogurt
PREPARATION:
1. Heat brown sugar, butter and oil in a medium skillet until bubbling.
2. Add rum, lime juice, cinnamon and nutmeg and cook until slightly thickened.
3. Add bananas and cook, stirring, until tender.
4. Divide into two portions and top with a spoon of low-fat vanilla yogurt each.
