Behind the Burner: Blood Orange Mimosa by George Duval

Makes 1 serving

INGREDIENTS:

10 Blood oranges (for a large batch)
1 oz. Blood orange juice
5-6 oz. Prosecco
Splash of St-Germain Elderflower Liqueur

PREPARATION:

1. Peel 10 blood oranges and break up into sections.
2. Put into a pot, muddle and add sugar (depending on preferred sweetness) and bring to a boil.
3. Strain the actual juice and cool down.
4. Take a champagne flute, dip half the rim into honey, then dip the same half into a citrus zest/sugar mix.
5. Pour in 1 oz. blood orange juice, a splash of St-Germain Elderflower Liqueur and 5-6oz sparkling wine.
