Behind the Burner: Black Tuna Truffle Sandwich by Geisha's Don Pham

Makes 4 servings

INGREDIENTS:

Inside ingredients:

6 oz. of Blue Fin or Big Eye Tuna
0.5 oz. of fresh summer or winter truffle
1/8 tbsp. of salt and black pepper
1 oz. of tobiko (flying fish roe)
1 pint of chives
Spicy mayo ( mix ketchup, mayo and tabasco)
Small handful of organic greens
4 potato chips
1/2 avocado

Outside the sandwich (the bread):

Sticky sushi rice
1 nori sheet (seaweed)
Black sesame seeds

PREPARATION:

1. Dice tuna and black truffle into small pieces, put tuna/truffle, salt/pepper, chives and tobiko all in a mixing bowl, mix well and add spicy mayo.

2. Stick rice to both sides of the seaweed sheet, cover with black sesame seeds and press until seeds stick into the rice.

3. Cut simulating bread loafs, fill with the mix prepared previously including the chips and sliced avocado. Garnish with greens.
