Biscotti di Mandorla (Abruzzo Almond Biscotti) by The Italian Academy of Cuisine

INGREDIENTS:

4 cups all-purpose flour
2 1/2 cups sugar
1 tsp. baking powder
6 large eggs
2 1/3 cups blanched almonds
Pinch of salt

PREPARATION:

1. Preheat the oven to 350 degrees F.

2. Mix the flour, sugar baking powder and a pinch of salt in a mixing bowl.

3. Blend in the eggs to form a smooth dough.

4. Knead in the almonds, then shape the dough into a cylinder, like a baguette.**

5. Place on a baking sheet and bake until the surface is light brown, about 20 minutes.

6. Remove from the oven and cut crosswise into slices.

7. Place these, without overlapping, on the baking sheet.

8. Put back in the oven for their second baking. Bake until crisp, about 20-30 minutes.

**Be generous with the flour during the kneading process; this will help hold your shape. But no worries if you don't get that perfect baguette shape; you can make it pretty during the slicing step!
