Barbeque-Glazed Salmon by Divya Gugnani

Makes 4 servings
INGREDIENTS:
4 salmon steaks
1 shallot, minced
1 cup dry white wine
1/2 cup ketchup
1/4 cup honey
1 tbsp. Worcestershire sauce
1/2 tsp. finely chopped garlic
1/2 tsp. chili powder
1 tbsp. extra virgin olive oil
Salt and pepper to taste
PREPARATION:
1. Combine shallot and wine in medium saucepan and bring to a boil. Add the ketchup, honey, Worcestershire sauce, garlic, chili powder and season with salt and pepper. Reduce heat to low and simmer 1 hour. Remove from heat and purée in blender.
2. Preheat oven to 425 degrees F.
3. Place salmon steaks in lightly oiled baking pan and coat with sauce. Bake for 5-7 minutes, depending on the thickness of the salmon. Turn the fish over and baste the other side, then bake until fish just flakes when tested with fork.
4. Top with extra barbecue sauce and serve.
