Barbeque Glazed Turkey Meatballs By Divya Gugnani
Makes 20 servings
INGREDIENTS:
1 1/4 pound package of fresh ground turkey
1 cup sauerkraut, drained and chopped fine
1/4 cup of barbecue sauce
1/2 cup of currant jelly
3 tbs. original flavored barbecue sauce
PREPARATION:
1. Heat over to 375 degrees F.
2. To make meatballs, combine turkey, sauerkraut, and the 1/4 cup of barbecue sauce in a medium bowl.
3. Shape turkey mixture into small meatballs, about 1-inch diameter.
4. Place in a 15-1/2 x 10-1/2 x 1-inch jelly-roll pan sprayed with cooking spray. Bake 12 to 15 minutes or until no longer pink in the center.
5. Meanwhile, heat jelly and the 3 tbsp. of barbecue sauce in a large skillet over medium low heat until jelly melts.
6. Add meatballs, turning to coat with glaze. Continue heating until meatballs are hot and glazed.
7. Makes 40 to 50 small meatballs.
