Behind the Burner: Baked's Chewy Granola Bars by Matt Lewis and Renato Poliafito

Makes 4-8 servings

INGREDIENTS:

3 1/2 cups Baked granola
1/4 cup corn syrup
1/2 cup sugar
1/2 cup water
3 oz. butter


PREPARATION:

1. Prepare a 9 inch. square baking pan. Line the bottom with parchment and spray with non-stick cooking spray.

2. Pulse granola in a food processor until roughly chopped. Then pour into a large mixing bowl.

3. Melt butter in microwave. Allow to cool.

4. Combine corn syrup, sugar and water in a small saucepan. Attach a thermometer. Bring to 238 degrees (softball stage).

5. Remove from heat. Carefully whisk in butter.

6. Pour sugar/butter mixture into granola. Combine with a rubber spatula and spread evenly into a prepared pan.

7. Cool completely.

8. Flip over pan and unmold granola bar. Cut into 2x2 inch squares and serve.
