Behind the Burner: Asian Inspired Tuna Salad by Divya Gugnani

INGREDIENTS:

1 can solid white tuna, drained
1 tsp. grated fresh ginger root
1/2 tsp. diced green chile pepper
3 tsp. finely chopped red onion
1/4 c. orange bell pepper, diced
1/4 tsp. curry powder
1/4 c. low-fat mayonnaise
1/2 tsp. fresh lemon juice

PREPARATION:

1. With a fork, flake tuna into a small bowl.

2. Mix in ginger, pepper, chopped onion, curry powder, mayonnaise, and lemon juice. Spread over slices of crusty bread for a great sandwich.
