Behind the Burner: Asian Ginger Sauce by Chef Dave Martin

Makes 10 servings

INGREDIENTS:

1 cup soy sauce
1 cup sugar
1/2 cup sherry
1 tbsp. ginger powder or fresh ginger
1 tsp. black pepper

PREPARATION:

1. Place all ingredients in a sauce pan and heat until boiling.

2. Bring liquid to 340 ˚F and watch that the pan does not boil over.

3. Test for flavor with a spoon. Take care not to burn yourself as the liquid will be extremely hot due to sugar content.

4. Season to taste. Enjoy over beef or chicken.
