Artichoke Salad by Divya Gugnani

Makes 2 servings

INGREDIENTS:

1 jar marinated artichokes, sliced
1 bulb of fennel, shaved
kalamata olives
olive oil
juice of 1 lemon
salt and pepper to taste

PREPARATION:

1. Mix all ingredients together.

2. Combine olive oil and the juice of one lemon together with salt and pepper to taste for dressing.
