Behind the Burner: Apples and White Cheddar by Divya Gugnani

Makes 5 servings

INGREDIENTS:

8 rectangular slices white cheddar
2/3 cup (1 medium apple) peeled and diced green apple
2/3 cup (1 medium apple), peeled and diced red apple
2 tbsp. cider vinegar
1/4 cup golden raisins
1/2 cup firmly-packed light brown sugar
1/4 cup chopped walnuts

PREPARATION:

1. In a small saucepan combine all ingredients except the cheese. Cook over medium-low heat for 15 minutes, stirring often.

2. Remove from heat and cool. For each plate, place one slice of cheese and top with apple mixture. Garnish with walnuts.
