Amaretto Irish Crème Cheesecake by Divya Gugnani
INGREDIENTS:
Crust:
1 1/2 c. vanilla wafer crumbs
1/2 c. chopped, toasted almonds
1/4 c. melted butter
1 tbsp. Amaretto
Filling:
3 (8 oz.) pkgs. cream cheese
1 c. sugar
4 eggs
1/3 c. whipping cream
1/3 c. ground almonds
1/4 c. Amaretto
1/4 c. Irish Cream liquor
1 1/2 c. low-fat sour cream
1 tbsp. light brown sugar
1/2 tsp. vanilla extract
1/4 c. sliced almonds
PREPARATION:
1. Combine all crust ingredients; firmly press mixture evenly on bottom of a lightly greased 10-inch springform pan. Bake at 350 degrees for 10 minutes. Set aside to cool.
2. On high speed, beat softened cream cheese until fluffy. Still mixing, add 1 cup of sugar. Add in eggs one at a time, beating after each. Fold in whipping cream, ground almonds, Irish Cream liquor and Amaretto.
3. Pour into pan and bake at 350 degrees for 50 minutes; turn oven off and leave cheesecake in oven for 30 minutes.
4. Combine sour cream, 1 tbsp sugar and vanilla extract; stir and drizzle over cake. Sprinkle sliced almonds on top. Bake at 500 degrees for 5 minutes. Cool, refrigerate and enjoy.
