Alligator Marsala by Fossil Farms

INGREDIENTS:
1 1/2 lb. alligator meat
all-purpose flour
2 tbsp. butter
3 tbsp. extra virgin olive oil
1 1/2 cups Marsala wine
1/2 cup chicken stock
black pepper
PREPARATION:
1. Season the alligator meat with black pepper. Dust meat with flour, shaking off any excess.
2. In a large thick skillet, melt both the butter and olive oil. When hot, pan-fry gator meat for 2-3 minutes per side.
3. Transfer the meat onto a plate. Drain most of the oil mixture. Add Marsala wine and chicken stock to the skillet. Boil for 2-3 minutes. It's best to scrape the bottom of the pot while doing this.
4. Reduce heat and add the alligator. Let simmer for 10-15 minutes. After stock has thickened remove from heat.
