Alaskan King Crab Stir Fry by Divya Gugnani

Makes 2 servings
INGREDIENTS:
6 oz. Alaska King crab meat
2 cups sliced fresh mushrooms
1 medium onion, sliced
1 small clove garlic, minced
2 tbsp. vegetable oil
1/2 red bell pepper, sliced vertically
3/4 cup diced tomato
2 tsp. all-purpose flour
1 tbsp. cold water
1/4 tsp. powdered ginger
1/4 tsp. salt
1/2 tsp. ground black pepper
1 bag boiled brown rice
2 lime slices
PREPARATION:
1. Cut crab meat into 3-inch pieces. Saute mushrooms, onion and garlic in oil on medium heat until slightly softened. Add crab, pepper slices and tomato. Stir-fry until vegetables are tender and crab is heated through.
2. Blend flour and water and mix into pan juices. Cook, stirring, until juices are thick and clear.
3. Season with salt, pepper, ginger, and lime juice and serve over brown rice.
