Behind the Burner: 7 Spice Pork Tenderloin with Apricot Sauce by Edible Haven

Makes 4 servings

INGREDIENTS:

1 pork tenderloin
1 tsp. cumin
1 tsp. cardamom
1 tsp. coriander seed
1 tsp. ground cloves
1 tsp. cinnamon
1 tsp. paprika
1 tsp. mace
1 tsp. each salt and pepper
1 tin sliced apricots
1/4 cup pure maple syrup
1/4 cup natural coconut sugar
virgin coconut oil for cooking

PREPARATION:

1. Cut tenderloin into 3 or 4 inch cylanders. The amount will be decided by the size of the tenderloin.

2. Mix spices together and rub thoroughly on pork.

3. In a sauce pan, combine maple syrup and coconut sugar, blend over medium heat. Drain and dice apricots finely, add to mixture and simmer until thick. Reduce heat, keep warm.

4. Preheat oven to 325 degrees.

5. In a cast iron skillet heat 1 tsp. of coconut oil per pork piece. Sear all sides of pork for 30 seconds on each side.

6. Put skillet in a preheated oven and cook for roughly ten minutes.

7. Serve with apricot sauce garnish.
