Behind the Sommelier
When did you first become interested in wine? (When was your first taste? How was the experience?)
My interest in wine began in my early twenties. I grew up in Western New York, which is close to both the Finger Lakes wine region and the Niagara wine region in Canada. It was at this time that I started taking tours of the wineries in these areas. I was immediately impressed with the seemingly infinite flavors and aromas that these wines had to offer. I then began reading different wine publications and tasting as much wine as I could.
What brought you into the wine business?
It wasn't until I was living in Cleveland, Ohio and working at the Baricelli Inn that I began to understand the true magic of fine wine. Learning about the 200 selections featured on the wine list became an obsession of mine. I began to study intensely, and in 2001 it paid off when I was hired at Tribeca Grill.
Do you have a favorite varietal or region?
Burgundy, I love the reds and whites from the region. The wines from Chablis are some of my favorites.
If you don't order wine at a restaurant or bar, which beverage do you choose?
Beer, I'm a big fan of Belgium and Germany.
What's your least favorite drink?
Apple juice
What's your best wine-drinking memory? What was the occasion?
Every year around the holidays I go to lunch with a few other NYC sommeliers. We always open amazing bottles and eat way too much food…
In your opinion, which country, other than the U.S., makes the best wine? Why?
France; they've had a few more years than the U.S. to work on it.
What are your thoughts on recent trends within the industry?
I think there is a big push for wines that represent great value. It's very important, not every one can drink Grand Cru Burgundy on a nightly basis.
What is the first thing someone learning about wine should know?
Keep an open mind.
What are some of your favorite food and wine pairings?
Côte-Rôtie and Peking Duck
Do you think any rules should be adhered to when pairing?
No! It's fun to try unconventional things.
What are some of the benefits of drinking wine?
I don't think I should answer this; my Mom may read this interview.
What wines should no home be without?
German whites and Rhône Valley reds, both are great value and food wines.
Do you have any favorite wine gadgets? Are there any new ones on the market? If so, what are they and where can people get them?

What are your three best tips, tricks or techniques for wine lovers?
When you are talking to a Sommelier at a restaurant:
1. Give your price range. It's our most important piece of information.
2. Be specific about your wine likes or dislikes.
3. Ask for labels from wines that you love, so you can remember them in the future.

Patrick Cappiello
Patrick Cappiello, wine director of Gilt restaurant, oversees a world-class wine list of 1,400 selections and a wine-by-the-glass program with over 40 different wines. Cappiello brings more than 21 years of industry experience to the wine program at Gilt.
His wine career blossomed in 2001, when he became the sommelier at Tribeca Grill under the restaurant's acclaimed wine director, David Gordon. Here, Cappiello cultivated a list bringing the restaurant's bottle count from 600 selections to 1,800 selections, further helping Tribeca Grill to win Wine Spectator's "Grand Award" in 2002. The restaurant has received the award every year since. Tribeca Grill enabled Cappiello to build relationships in the wine industry and he was soon invited to visit vineyards in Tuscany, Piedmont, the Rhône Valley, Burgundy, and the major wine regions of Germany.
It wasn't until 2005 that Cappiello made the move to become the sommelier at a New York City restaurant well known for its wine program, Veritas. Here, he guided guests through a wine list of 3,500 selections and maintained a strong familiarity with every bottle. Cappiello traveled to Chile to tour select vineyards and meet some of the country's finest winemakers, further extending his reach and access to the world's most celebrated wine regions.
