Behind the Mixologist
When did you first become interested in mixology?
I learned by doing. I got the opportunity to bartend, and when people responded well I started liking it more and more.
What brought you into the drink business?
I fell in love with the rhythm and excitement of the business.
If you don't order a cocktail at a restaurant, which beverage do you choose?
Usually a glass of Prosecco.
What is your least favorite drink?
Sex on the beach, or anything lacking subtlety.
What is your best drinking memory? What was the occasion?
Spending summers and holidays with my family in Costa Rica, and also having my first taste of Cacique (a liquor made from sugar cane that is very popular in Costa Rica).
What are your thoughts on recent trends within the industry?
There's been a big push towards classic cocktails and "the art" of it all.
What is the first thing someone learning about mixology should know?
Learn how to pour ounces. Practice by using a jigger.
What are some of your favorite food and drink pairings?
A delicious salad with a refreshing white wine cocktail.
Do you think any rules should be adhered to when pairing food and drink?
There are no rules. Your options are endless, so just have fun with it!
What booze should no home be without?
No home should go without good wine-- it's great for cooking and impromptu entertaining.
Do you have any favorite bartending/mixology gadgets?
A citrus stripper because a good twist is so vital. My favorite one is sold at Williams Sonoma.

Jennifer Castillo
Jennifer Castillo, a Miami Florida native is the head bartender at the notable Manhattan eatery, CAFETERIA. As her employment with CAFETERIA reaches nearly four years, and her time behind the bar approaching three, it is no wonder that this mover (or muddler) and shaker has climbed to the top of the mixology chain; creating original recipes and seducing diners with her bubbly personality as well as her vast knowledge of the spirits world. In addition to her mastery of the 26 recipe based cocktail and mocktail menu at CAFETERIA, her close relationships with liquor vendors including Starr Rum, Tanteo Tequila, Voli Vodka, etc as well as the demand for inventive, organic cocktails has encouraged Jennifer to team up with a fellow CAFETERIA big shot to start their own beverage consulting agency, Dynamic Mixologist. At only 26, Jennifer has given up the beach in exchange to take over the city.
