Where does the name of the restaurant come from?
Becquer was a famous writer in Spain who wrote about the Brujas, witches. Cartas desde mi Celda was the most famous story written.
What were your favorite foods growing up?
Regional vegetables, lamb de lechal
When did you decide you wanted to be a chef?
When I was able to comprehend the meaning of life
Where and when did your career in food begin?
It began in 1973 in my uncle's restaurant in Terazona.
If you hadn't become a chef, what would you be?
I would be a traveler. I would earn money by making meals for families in each town I traveled to.
What influences your cooking style and particularly the menu at your restaurant?
My uncles are my greatest influences.
What are your favorite culinary weapons in the kitchen?
I love using slow fires.
What is your favorite secret ingredient?
Love
What is the one rule or value you try to instill in all of your staff?
To do everything with an objective in mind.
