When I started going to college, I had no choice and I was pretty good on the burner

Wy wife Rakia and a little TV/eating out
How would you describe the cuisine at Capitol 1830?
We are like Chilli's and an Outback Steakhouse,but takeout the down-under
What influences your cooking style and particularly the menu at your restaurant?
That comes from all the traveling from my job.every city we went to,I took a menu from each restaurant or I would write down whatever I like from the hotel menu
What are your favorite culinary weapons in the kitchen?
The spatula
What is your favorite secret ingredient?
Mc Cormick season-all
What is the one rule or value you try to instill in all of your staff?
We are all human beings, let's start here
What qualities do you look for when hiring cooks for your restaurant?
To be honest I let my kitchen manager make that call because I live 1700 miles away
If I'm trying to watch my weight and I'm eating at your restaurant, what should I order to eat?
We have the best salads on the west side of the Mississippi river in Louisiana, oh yeah add grill shrimp
What was your worst restaurant disaster?
I had to fire my first contactor. 6 months of nothing and alot of money
What is your least favorite food?
That's a hard one. I can eat anything and don't have any dislikes
What is your beverage of choice?
I love wine. My favorite is meritage(blend)
What are some recent dining and culinary trends you have been observing?
I try to keep up with the food network..this industry is about whats new.
When you are not eating at your own restaurant, where are you eating?
I'm a big fan of Flemings and all the great places on federal hill in providence,RI
Which foreign country inspires your style most?
Good day mate, Is that enough for you.
What was the most spectacular meal you have ever had?
when my wife cooks Crawfish Monica for the first time with smothered pork ribs,ohh-weee
What is your best cooking tip for a home enthusiast?
Be yourself,it's just a book, and you don't have to follow it step by step. I never did

My wife's cooking, it's the best

Jarvis Green
Jarvis Green, starting defensive lineman for the New England Patriots, has come a long way from his roots in the small town of Donnelsonville, LA. The former LSU construction engineering major virtually runs through his opponents on the field, racking up sacks and causing fumbles. In fact, he's been named Defensive Player of the Week numerous times throughout his career. Further, he's helped his team achieve an 18-0 record for the 2007-2008 season. However, despite playing an integral part in his team's winning 3 Super Bowls since being signed in the fourth round of the 2002 NFL draft, when the pads and helmet come off, he remains humble.
A stanch servant to the less fortunate, Green founded was awarded the New England Patriots Ron Burton Community Service Award in 2006 and founded the Jarvis Green Foundation in 2007 to provide support to single working mothers in disadvantaged, low-income areas (i.e., Hurricane Katrina single mothers). The Foundation's first event was a September 2007 wine tasting and silent auction, which raised money for single mothers affected by Hurricane Katrina. Partial proceeds also went into a trust fund he started for Ma'shy Hill, the toddler son of his fallen friend and teammate, Marquise Hill. Since his friend's untimely passing, Jarvis has stepped in as a surrogate father to the boy. The midseason release of "60 Minute Men" T-shirts- which not only captured the Patriots' "Play all 60 minutes of the game, no matter what" philosophy and further honored Hill with a small insignia of his jersey number, but also helped raise more money for Ma'shy's trust fund- was another effort of the Jarvis Green Foundation.
In addition to his NFL duties and charity endeavors, Jarvis also owns a few businesses, including a construction company and a restaurant, The Capitol, which he opened in his hometown during the off season. Further, he has a weekly segment on NBC channel 10 in Providence, RI. As if that's all those activities and his family doesn't keep his calendar full enough, he still takes time to communicate individually with fans- from his hometown and throughout the country- via his website (www.jarvisgreen.com).
