Behind the Restaurateur
When did you decide you wanted make your mark on the NYC nightlife scene?
I didn't really, since I was 8 years old I've wanted to have my own restaurant. My first was Lot 61, a hybrid lounge/nigthclub. I had no intention of making a mark, I wanted to make a living.
What countries, places and environments inspire your style?
Everywhere I go inspires me in some way, I learn everyday, especially when I travel overseas.
What was your original vision for Bungalow 8? How has the club evolved since you opened?
In our 8th year at Bungalow 8 we are still living my original vision. It is private and discreet with a focus on atmosphere and service.
What makes Bungalow 8 different from the other NYC and London hot spots?
It's not necessarily different; there are lots of hot spots worldwide, we just do the best we can to make our guests happy and keep challenging ourselves to be better everyday.
What are the three most important ingredients to creating a successful lounge or club?
Service, consistency and atmosphere
Where do you like to eat in New York? in London?
In New York, Le Bernardin, Indochine, NOBU and Cipriani; in London I like to eat at Cipriani or NOBU or at home as my boyfriend is a professional chef. I have recently gotten into a lot of Pan Asian and Indian food, and of course, Sunday is roast lunch at Paradise Pub.
What is your beverage of choice?
Vodka on the rocks, simple and clean
Do you drink it alone or have foods you like to pair it with?
It goes with everything, but with dinner I usually drink wine.
What trends have you been observing in the mixology world?
None that I haven't seen or done already
What is your favorite cocktail to make at home?
I will always love a good margarita. I go to my clubs to have all the others, by the time I get a chance to stay in for a night I'm too lazy to make them!
What inspired you to write Cocktail?
I wanted to share some of the fun that we have at Bungalow 8 with everyone.
What is your best tip or bit of advice for someone venturing out into starting their own night club?
Make sure you are either prepared to give up your life or lose a lot of money.

Amy Sacco
Amy Sacco, the reigning queen of Manhattan's nightlife, grew up in Chatham, New Jersey before moving to the Big Apple where she conquered the jet set social scene. After graduating from Johnson and Wales, Amy took a job at Bouley where she began making the connections which laid the foundation for her empire.
