Dish of the Day: Urbana's Squid Ink Liguine
Black Plague Pasta? Or Black Crave Pasta, in my opinion. You would think after studying in Italy for five months, I would have come across such a dish. But it was not until I visited Urbana of Washington D.C., that I lost my squid ink virginity.
Made with calamari, pancetta, rosemary, and cherry tomatoes, this was the first time I ever felt black on a dish become almost vibrant. An abundance of bacon flavor due to the panchetta, mixed with fresh cherry tomatoes was enough to satisfy any Italian appetite. Complimented by calamari (that for once was not fried), I was able to enjoy the light, smooth linguine that was packed with such bold ingredients.
Tip: The pasta gets its deep black color from squid ink, which has a rich, slightly briny flavor.
