It's January 6th (also known as l'Epiphanie in France), a traditional Christian holiday that marks the last day of Christmas. So why not celebrate with one last buttery holiday indulgence?

Enter the galette du rois or "king cake", a puffed, golden confection containing almonds, vanilla pastry cream and, of course, a porcelain trinket. Since you can't have king cake without a king, the lucky recipient of the trinket dons the golden paper crown that comes with the cake, thereby becoming "king" or "queen" for the day. But trinket or not, this traditional French pastry is not to be missed.

Tip: Pick up an authentic galette at Financier or try Chef John Besh's Mardi Gras version of the cake.
