A Sauce to Hold Onto
The other night, my friend and I sat at my table with tears in our eyes, passing the box of Kleenex. Think we were sniveling over a sappy chick flick? Think again. We were recovering from—yet reveling in—Chef Daniel Orr's Don't Let Your Man-Go Anguillan-Inspired Hot Sauce. Ironically enough, we're both single.
When I looked in the freezer for something to cook, I could no longer bear the sight of my naked shrimp clinging together in a cheap, transparent zipper bag. I wanted to rescue them and cloak them in something…warm. Mission accomplished, to say the least. In a hot pan, I poured the whole bottle of Orr's sauce over my shrimp. They went from icy to feisty in a matter of minutes.
With each lick of this sunset-colored condiment, my tongue tingled and throbbed from the blast of Scotch bonnet chiles mixed with Orr's secret spice concoction. I felt like one of those cartoons with steam piping from the ears. Yet just before I screamed for water, a hint of fresh mango left me with a sweet, pleasant finish. I wiped my brow and repeated the process again and again. I was obsessed. You will be too.
Fever? Bad Temper? First-date nerves? One splash of this stuff on fish, chicken, pork, tofu or veggies and you'll sweat it out 'til there's nothing left but cool docility.
Trust me, you won't want to let go of this sauce. It'll blow your man (or woman) away. I do, of course, mean that in a good way.
